Scope note
Any of a class of purple, red, orange and yellow pigments, including the carotenes, the xanthophylls, and fucoxanthin, found widely in plants and animals and are characterized by solubility in fats and oils. They provide the color of such things as carrots, bananas, corn, and crustaceans. Carotenoids are used in food coloring and in dyes applied to textiles.
